Zarb is the hearty Bedouin desert feast, where meat and vegetables are lowered into a sand oven, sealed and slow-cooked for hours to emerge smoky and tender. It is the traditional dinner at Wadi Rum camps.
The communal meal is as much about atmosphere as taste — eaten around lanterns under the stars.
